90 second bread using coconut Flour
Ingredients
- 1 large Egg white
- 1 tbsp Coconut Flour
- 1 tbsp melted butter
- 1/4 tsp baking powder
- 1 pinch salt
Instructions
- crack egg into a small microwaveable container and whisk with a pinch of salt
- add rest of ingredients and mix well. Add more seasoning to taste
- Tap on container to remove air bubbles
- microwave on full power for 90 secs (no longer or the bread with dry out)
- can be eaten like this for soft bread or toasted.
Notes
You can add the whole egg if you like the eggy taste and want a more yellowy colour.

Despite its name, coconut is actually a fruit so its usually suitable for those with nut allergies; however its always worth checking with the person (or with their doctor/allergy specialist) to determine if coconut is not a problem for them.
