Courgetti with Chicken, spinach and parmasan

A simple, elegant yet tasty dish

  • 300 g chicken thighs
  • 2 cloves garlic
  • 100 g spinach
  • 2 courgettes
  • 75 g parmesan


  • Preheat oven to 220/200oCFan/gas mark 7. Place chicken thighs in a baking dish (or in foil), coat with avocado oil and sprinkle half the garlic and the oregano over both sides. Season with salt and pepper.
    Cook for 20 mins
    Remove and dice after a few minutes
  • Spiralise courgette
  • Heat 1 tbsp avocado oil in a large wok and add remaining garlic and spinach. Allow to wilt which should take 3/4 mins.
  • Once spinach has wilted down, add courgetti, chicken and stir together. Warm through for 2/3 mins
  • Serve with a good serving of freshly grated parmesan cheese and cracked black pepper
