Keto Raspberry Muffins

Ingredients
  

  • 280 g Almond Flour
  • 100 g Erythritol
  • 1.5 tsp Baking powder
  • 1/4 tsp sea salt
  • 1 tsp cinnamon or mixed spice
  • 3 large eggs (room temperature)
  • 250 ml unsweetened milk (Ive used almond milk in this recipe, but coconut, cashew, soy, oat or even dairy all work well but will affect the carb content.
  • 75 g coconut oil (melted)
  • 1 tsp vanilla extract
  • 120 g raspberries (fresh or frozen)

Instructions
 

  • Mix all the dry ingredients together
  • Whisk all the wet ingredients together
  • Mix the dry and wet ingredients together and add the raspberries
  • One final mix before pouring in to muffins cases (silicone is great because you dont need cases or to oil them first
  • Bake at 180 degrees C for 25 mins
  • Cool before removing from silicone cases
  • serve on their own or with greek yogurt and extra raspberries
