Keto Raspberry Muffins
Ingredients
- 280 g Almond Flour
- 100 g Erythritol
- 1.5 tsp Baking powder
- 1/4 tsp sea salt
- 1 tsp cinnamon or mixed spice
- 3 large eggs (room temperature)
- 250 ml unsweetened milk (Ive used almond milk in this recipe, but coconut, cashew, soy, oat or even dairy all work well but will affect the carb content.
- 75 g coconut oil (melted)
- 1 tsp vanilla extract
- 120 g raspberries (fresh or frozen)
Instructions
- Mix all the dry ingredients together
- Whisk all the wet ingredients together
- Mix the dry and wet ingredients together and add the raspberries
- One final mix before pouring in to muffins cases (silicone is great because you dont need cases or to oil them first
- Bake at 180 degrees C for 25 mins
- Cool before removing from silicone cases
- serve on their own or with greek yogurt and extra raspberries
