Courgette Tacos
Ingredients
- 2 courgettes
- 200 g mince (chose your mince based on taste)
- 1 packet taco seasoning Better still make your own
Topping options
- 1 handful coriander
- 1 tbsp soured cream
- 1 avocado
- 1 tbsp salsa
- 1 spring onion
- 1 tbsp Guacamole
- 1 tbsp chopped tomatoes
- 1 tbsp Cheddar cheese Grated
Instructions
- Preheat Oven to 210/190oC/Gas Mark 6
- Fry the beef mince. Season the mince with taco seasoning while it’s cooking for that deliciously flavoursome taco flavour. You can use any mince you like (beef, lamb, pork, turkey or even quorn) for a similar taste sensation. Mix it up.
- Prepare the courgette. While the mince is cooking, cut the courgette in half lengthwise and scoop out the seeds with a spoon.
- Assemble and cook the courgette taco’s. Fill the courgette halves with the seasoned mince. Then bake them for 15-20 minutes, or until the tops are lightly browned and the courgette is softened, yet crisp.
- Remove from oven: Then add your favourite taco toppings (sour cream, avocado, grated cheese, coriander, lime juice, spring onions, salsa)
