Sweet Potato Toast

Swop your bread for sweet potato for a low carb alternative

  • 1 sweet potato

Topping Ideas

  • Cream cheese and smoked salmon
  • Humous and red peppers
  • Smashed avocado and crispy bacon
  • Scrambled egg and cucumber with chives
  • Nut butter of choice and chopped banana (with a side of pistachios yum!)
  • Cooked chicken and sesame seeds
  • Pate and pumpkin seeds
  • Yogurt and blueberries
  • Fried egg, salt and pepper
  • Bacon Lettuce and Tomato (BLT)
  • Grated Cheddar Cheese for a modern twist on cheese on toast.


  • Slice sweet potato into long flat slices
  • Pop into microwave on high for 4-5 mins until soft
  • Optional step - place under grill for 1-2 mins until browned and slightly crispy
