- 1 Sweet Potato
- 2 large eggs
- 1 knob butter
Optional toppings
- 1 tbsp Maple Syrup Chose Keto friendly
- 1 tbsp Pistachios chopped
- 1/2 Avocado smashed with chilli flakes and lime zest
- 1 tbsp Soured Cream or Crème Fraiche
Preheat oven to 220/200oC/gas mark 7.Bake sweet potato until soft. Remove from oven and wait till cool. Mix with eggs. (for best results, blend together)
Heat up a non-stick frying pan, add a small knob of butter. Once hot, add a small scoop of the sweet potato mix into a frying pan on medium heat.Fry on both sides until caramelised. Serve with Toppings of choice.
