
Cauliflower mash
Ingredients
- 400 g Cauliflower
- 30 g sour cream or oat cream for vegan option I just use a large dollop
- 2 tbsp Nutritional Yeast
Instructions
- Boil or steam the cauliflower until very soft
- mash/whip the cauliflower with the sour cream, nutritional yeast and salt & pepper to taste
- drizzle good quality extra virgin olive oil, yeast flakes and spring onions on top as desired.
Notes
This is a great alternative to mashed potato. Its low in carbohydrates and a great way of getting more veggies into family members. Keto and low carb diet friendly. Naturally vegetarian and if you substitute the sour cream for oat cream you have a delicious vegan alternative.
If going with a full replacement is too much for some, add a gradual increase of quantities of this cauli mash to standard potato mash over time. Even half and half will be a great option.
